fris-zoete rijst














































English version of the recipe (fresh-sweet rice)

- cook 150 gr. (unpolished/brown) rice according to the directions on the package.
- peel one big carrot and one sweet potato, cut into pieces and cook for 10 minutes.
- fruit one union in a pan with some olive-oil.
- clean one yellow pepper and cut into small pieces. Add to the union and fry for 10 minutes.
- drain off the carrot and the potato and add together with the rice to the union and the pepper.
- add salt and pepper to taste and add curry powder as you like.
- as a last thing you cut the halve of a cucumber in pieces and crumble 50 gr. soft goat cheese and stir everything one last time.

100% natuurlijk

Een paar weken geleden bestelde ik de gratis minigids "wat zit er in onze voeding" van de consumentenbond. Het leek mij interessant omdat het over e-nummers, conserveermiddelen en kleurstoffen gaat. Ik eet deze stoffen niet, maar lees er graag over omdat ik de "feitjes" wil weten. Wat nieuw voor mij was is dat fabrikanten blijkbaar alles eraan doen om hun producten toch nog te blijven verkopen. Zo speelt er sinds lange tijd een "E-angst" in onze samenleving dus wat gebeurd er? De e-nummers verdwijnen en daarvoor in de plaats wordt er meer suiker en zout toegevoegd om de producten langer houdbaar te houden. Het verbazendste vond ik de nieuwe rage onder levensmiddelenfabrikanten: clean labelling oftewel "schoon etiketteren". Dit betekend dat je met het etiket de indruk probeert te wekken dat het gaat om een eenvoudig samengesteld product. De fabrikanten mogen zelf kiezen of ze het e-nummer noemen of het additief bij naam. Paprika-extract klinkt vriendelijker dan E160c. Het tweede deel is om stoffen te vervangen zonder e-nummers. "Zonder kunstmatige kleurstoffen" bij bijvoorbeeld de Haribo-beertjes. Ze krijgen hun kleur van spinazie, zwarte bes of andere fruitsoorten. Maar niet altijd betekent de claim "zonder kunstmatige kleurstoffen" dat er eerst wel kunstmatige kleurstoffen inzaten of dat je die wel in vergelijkbare producten aantreft. Net zoals "geen toegevoegde smaakstoffen". De e-nummers worden bijvoorbeeld vervangen door gist-extract, klinkt ook net iets vriendelijker. Maar gist-extract bevat zo'n 3 tot 5% glutamaat, dezelfde stof als E621, dus het is een stiekeme manier om het glutamaat toe te voegen.  Een voorbeeld van "misleiding" is bijvoorbeeld Rivella: het drankje wordt aangeprezen met de claim "met natuurlijke ingrediënten". Maar als je goed oplet merk je dat er ook kunstmatige ingrediënten inzitten anders had er "100% natuurlijk" op gestaan: In Rivella zitten zoetstoffen en conserveermiddelen…
Het lijkt erop dat er alles aan wordt gedaan om de klant de overtuigen dat het natuurlijk en gezond is en vooral ook dat de lijst met ingrediënten begrijpelijk is en niet iets is dat ons bang maakt. Er staan immers geen rare nummers of stoffen op. Zo kan ik nog wel even doorgaan maar ik hou het er gewoon bij dat als je zelf alles vers toebereidt en niks uit pakjes, zakjes en tubes haalt, je dit alles kunt vermijden!

zomerse tagliatelle



















































English version of the recipe (summery tagliatelle):
For 2 persons:

- prepare 250 gr. tagliatelle according to the directions on the package.

- grate a handful of pine nuts in a dry pan without oil.
- cut one union in small pieces and fry in some olive oil.
- wash a cucumber and cut in with a cheese slicer in long slices and bake together with the union for 2 minutes.
- cut 8 cherry tomatoes in pieces and put them in a big bowl, together with 75 gr. rucola salad.
- crumble 100 gr. soft goat cheese, add to the salad and mix with 4 tablespoons olive oil.
- pour off the tagliatelle and add together with the the cucumber to the salad.
- add salt, pepper and oregano to taste.
- as finishing touch sprinkle the pine nuts over the salad.
